Happy Thanksgiving! (Hail Seitan!)

Today is a day to give thanks and eat turkey (or a reasonable facsimile, if you’re a veg*n like me) with all the trimmings. The next week or so people will be devising creative ways to use their leftovers. How many unique dishes can you make with turkey anyway?

Where does Seitan come in? I haven’t forgotten how to spell, nor is it a reference to Lucifer (not that there’s anything wrong with that). Seitan is a wheat gluten product used in many veg*n meat substitutes including Tofurkey. It is one of the many things I’m thankful for.

I’m also thankful many other things including;
*My lovely wife,
*The rest of my family (mom, dad, sisters, brothers, etc.),
*My crazy kittens,
*Books, movies, music, my knitting,
*My computer, the Internet,
*The pharmaceuticals that help with my migraines (though I’d appreciate some health insurance to offset the costs–a one month supply is at least $212)

I wish you all a Happy Thanksgiving. May you have a wonderful time with family and friends, and have much to be thankful for.
